Why do we love this whisky?

The Flagship Yamazaki 12, crafted at Japan's first and oldest malt distillery, aka the birthplace of Japanese Whisky, was founded in 1923 by Shinjiro Torii. It is said that Torii, inspired by traditional Scottish whisky, selected the land of Yamazaki at the foot of Mt. Tennozan for its high-quality water source and natural environment ideal for whisky making.
Fifth-generation Chief Blender, Shinji Fukuyo, brings us quintessential Yamazaki: multi-layered depth and complexity, with soft fruit and Mizunara notes. Suntory’s Yamazaki distillery is well-known for its expertise in the management of Mizunara, which, when left to mature correctly, offers complex notes of sandalwood, coconut, spice and Japanese incense.

Mizunara oak is notoriously difficult to work with due to its porous nature and tendency to leak, making it one of the most challenging woods for cooperage. However, when managed expertly like at Yamazaki, it imparts extraordinary flavours of sandalwood, coconut, oriental spices, and Japanese incense that simply cannot be achieved with American or European oak. This indigenous Japanese wood creates the distinctive character that separates Japanese single malts from their Scottish counterparts, contributing to Yamazaki 12's complex aromatic profile.

Founder Shinjiro Torii specifically chose the Yamazaki valley at the foot of Mt. Tennozan because three rivers converge there, creating a unique microclimate with high humidity and temperature variations ideal for maturation. The pristine mountain water, filtered through bamboo groves, provides the perfect mineral profile for whisky production. This natural environment, combined with Japan's distinct seasonal changes, creates optimal conditions for the slow extraction of flavours from both traditional and Mizunara oak casks.

While inspired by Scottish methods, Japanese whisky embraces the concept of 'monozukuri' - the art of making things with pride and dedication to perfection. Japanese distillers like Yamazaki focus on harmony and balance rather than bold, aggressive flavours, resulting in whiskies with subtle complexity and elegant restraint. The integration of local ingredients like Mizunara oak and the meticulous attention to seasonal variations in maturation reflects Japan's deep respect for natural processes and craftsmanship.

This refers to how different flavour components reveal themselves at various stages of tasting, creating an evolving sensory experience. Initially, you might detect the soft fruit notes, followed by honey sweetness on the mid-palate, then the distinctive sandalwood and spice from Mizunara oak on the finish.
