Notes from the maker

Sourdough is back. In our perpetual search for ways to revolutionise whiskey, we reached out to James Beard Award-winning baker Ken Forkish and introduced his French sourdough levain instead of our typical pale ale yeast. This creative release is a thoughtful mingling of four different vintages from across the years which builds on the success of our inaugural Sourdough release (2020).

This technique introduces wild yeasts and lactobacilli that create complex esters and organic acids, resulting in those distinctive toasted bread and buttery notes. The process mirrors traditional sourdough fermentation, where beneficial microorganisms develop flavours over time, making this whisky a true intersection of baking and distilling craftsmanship.
