This late 2023 single barrel release was allocated to Westward's Whisky Club, but a small volume made it to Australia. Westward acquired some very special casks that had been continuously used to mature Cognac for more than 40 years. Almost four years in new American oak plus twelve months in the Cognac cask has resulted in a delicious integration of flavours that's been talked up as one of the distillery's best to date.

The cognac cask finishing adds a distinctly French influence, creating layers of fruity complexity that you won't find in traditional bourbon or rye whiskeys. This cross-cultural approach to maturation showcases how American distillers are pushing boundaries by combining New World innovation with Old World techniques.

Cognac casks impart elegant fruity characteristics because they previously held grape-based spirits, which naturally contain esters and compounds that create notes of dried fruits, apricots, and figs. The porous oak has absorbed these flavours over years of cognac maturation, then slowly releases them into the whiskey during finishing. This creates a more refined, wine-like complexity compared to standard bourbon barrels, adding sophistication and a silky mouthfeel that bridges the gap between whiskey and brandy.

Serve this whiskey neat at room temperature (18-20°C) in a tulip-shaped glass or Glencairn to concentrate the aromatic compounds from the cognac influence. The fruit-forward profile from cognac cask maturation pairs beautifully with dark chocolate desserts, aged cheeses like Gruyère or aged cheddar, and charcuterie featuring dried fruits and nuts. The caramelised apple and fig notes also complement roasted duck or pork dishes with fruit-based sauces. For a sophisticated pairing, try it alongside a cheese course with honeycomb - the whiskey's natural sweetness and spice will enhance both the creamy textures and the honey's floral complexity.
