Why do we love this whisky?
Already practiced by the most visionary winemakers, the pioneering Irelanders at Waterford were also intrigued by what biodynamics could lend to the flavours captured in their spirits.
Biodynamic agriculture goes beyond the usual ecological practices, instead drawing upon the ancient lore of lunar cycles & somewhat mystical preparations which seek to charge the soils with vitality, and barley grown from those magical soils with vibrancy. This landmark whisky, distilled from Ireland’s only biodynamic barley, has, in their words 'invoked the goddess of the moon' for what they refer to as their 'most esoteric & evocative bottling' and we tend to agree. From the heady and evocative aroma of hay after a rain shower, to seductive spice and mint tea on the complex and multi-layered palate that leads to a lingering, or rather everlasting finish.
