Why do we love this whisky?

Nestled in the heart of the Scottish Highlands, Tomatin Distillery has been crafting exceptional single malts since 1897. Known for its smooth, fruity whisky, Tomatin has long been a pioneer in the art of maturation, blending tradition with innovation to create some of the most well-regarded drams in the region.

Unlike the distillery’s classic unpeated style, Cù Bòcan is distilled using lightly peated malt, but only during a short winter window each year. This gives it a distinctive, subtle smokiness that sets it apart from traditional Islay peat monsters, making it a fascinating hybrid of Highland elegance and smoky intrigue.

Frequently Asked Questions

Cù Bòcan breaks from Tomatin's traditional unpeated style by using lightly peated malt, but only during a limited winter production window each year. This creates a unique Highland whisky that bridges the gap between the region's typically smooth, fruity character and the smoky complexity usually associated with Islay malts. The result is a sophisticated dram that offers subtle smokiness without overwhelming the distillery's signature elegance.

The winter production window for Cù Bòcan is likely tied to both practical and flavour considerations in whisky making. Cooler temperatures during winter months provide better control over fermentation and distillation processes, which is particularly important when working with peated malt. Additionally, the seasonal production creates scarcity and allows the distillery to dedicate specific periods to this unique expression, ensuring consistency in the lightly peated character that defines Cù Bòcan.

Cù Bòcan uses 'lightly peated' malt, which typically measures around 10-15 PPM (parts per million phenols), significantly lower than most Islay whiskies that often range from 25-55 PPM. This restrained approach to peat creates a whisky that introduces smoky elements without dominating the palate, making it an excellent gateway for those curious about peated whiskies but hesitant about the intense smoke bombs from islands like Islay.

The medium-bodied profile with raisin, toffee, and subtle smoke makes Cù Bòcan versatile for food pairing. The sweet toffee and raisin notes complement rich desserts like dark chocolate tart or sticky toffee pudding, while the gentle smokiness pairs beautifully with grilled salmon, smoked cheeses, or even barbecued meats. The Highland elegance also makes it suitable alongside traditional Scottish fare like haggis or aged beef.

Absolutely - Cù Bòcan is an ideal introduction to peated whisky for newcomers. The light peat influence provides just enough smokiness to understand what peat brings to whisky without the overwhelming intensity that can intimidate beginners. Combined with Tomatin's reputation for smooth, approachable whiskies and the familiar Highland characteristics, it offers a gentle bridge between unpeated malts and the more assertive peated expressions from other regions.
