This isn't your typical Highland dram. Cù Bòcan Creation 5 takes distilling to a new level. Made with lightly peated malt, it’s distilled only in winter, when the colder temps allow for extra precision. But the real magic? The cask selection. This limited-edition beauty is matured in a fusion of ex-Colombian rum casks made of rare Andean oak, and Spanish oloroso sherry casks. The rum casks bring in luscious tropical notes of caramelised banana, molasses, and warming spice, while the sherry influence layers on deep, dark fruit and rich chocolate. And just when you think you’ve got it figured out, that signature wisp of Highland smoke kicks in, leaving a lingering, smoky-sweet finish.

Why do we love this whisky?

Nestled in the heart of the Scottish Highlands, Tomatin Distillery has been crafting exceptional single malts since 1897. Known for its smooth, fruity whisky, Tomatin has long been a pioneer in the art of maturation, blending tradition with innovation to create some of the most well-regarded drams in the region.

Unlike the distillery’s classic unpeated style, Cù Bòcan is distilled using lightly peated malt, but only during a short winter window each year. This gives it a distinctive, subtle smokiness that sets it apart from traditional Islay peat monsters, making it a fascinating hybrid of Highland elegance and smoky intrigue.

Frequently Asked Questions

Cù Bòcan represents a fascinating departure from Tomatin's traditional unpeated style, using lightly peated malt that's only distilled during a short winter window each year. This seasonal production creates a distinctive smoky character that bridges the gap between Highland elegance and Islay-style peat influence. The result is a more complex, intriguing dram that showcases the distillery's versatility beyond their classic fruity profile.

While Islay whiskies are famous for their intense peat smoke that can dominate the palate, Cù Bòcan offers a much more restrained approach to peat. The light peating allows the underlying Highland character to shine through, creating subtle smoky notes that complement rather than overpower the whisky's fruity and caramel flavours. This makes it an excellent introduction to peated whiskies for those typically preferring unpeated expressions.

The combination of smoky, fruity, and caramel notes in this full-bodied expression pairs beautifully with rich, savoury dishes that can stand up to its complexity. Consider pairing it with grilled salmon, dark chocolate desserts, or aged cheeses like mature cheddar or blue cheese. The subtle smoke also complements barbecued meats, while the fruity undertones work wonderfully with apple-based desserts or charcuterie boards.

The winter production window for Cù Bòcan is a deliberate choice that reflects traditional Scottish distilling practices and practical considerations. Cooler temperatures during winter months allow for better control over fermentation and distillation processes, particularly important when working with peated malt. This seasonal approach also creates natural scarcity and allows the distillery to focus their expertise on this special expression, ensuring consistent quality and maintaining the mystique around this unique Highland peated whisky.

The Gold medal recognition from the San Francisco World Spirits Competition places this whisky among the top tier of international spirits, validated by expert judges from around the world. This competition is particularly rigorous, with entries blind-tasted against global benchmarks, making the 90-point score a significant achievement. The award confirms that Cù Bòcan Creation 5 successfully balances its unique peated Highland character with exceptional craftsmanship, standing out in a crowded field of premium single malts.
