If you've got a soft spot for heavily sherried whisky, you've just found your holy grail. Distilled in 2006, this 17 Year Old Tomatin is a standout release from their highly sought-after Sherry Collection. After maturing gracefully in traditional oak, the liquid is moved into premium Pedro Ximénez sherry casks. PX is famously sweet and syrupy, and it completely transforms this Highland malt. Expect a decadent hit of sticky date pudding, dark chocolate, freshly roasted espresso and heavy dried figs. The finish is remarkably long, rich and packed with warming winter spices. Why do we love this whisky?

Tomatin has one of the most fascinating comeback stories in the Scottish Highlands. Tucked away in the Monadhliath Mountains just south of Inverness, they were actually the largest distillery in Scotland during the 1970s. Back then, they operated as a massive workhorse, churning out millions of litres for the global blending industry. But times change, and Tomatin made a brilliant pivot. They drastically scaled back their production, shifted their focus away from sheer volume, and dedicated themselves to crafting exceptional single malts.

Frequently Asked Questions

Pedro Ximénez sherry casks are prized for their intensely sweet, almost syrupy character that transforms single malt whisky during maturation. These Spanish dessert wine barrels impart rich notes of raisins, figs, and dark chocolate, creating a luxurious mouthfeel that complements Tomatin's Highland character. The 17-year maturation period allows the whisky to fully absorb these complex flavours while maintaining its Scottish identity.

The Monadhliath Mountains provide Tomatin with exceptionally pure water sources and a cool, stable climate ideal for long maturation. This Highland location, south of Inverness, offers temperature variations that encourage the whisky to interact more dynamically with the Pedro Ximénez cask over 17 years. The mountain environment also means less industrial pollution, allowing the whisky's natural character to develop without interference.

The 2006 vintage represents Tomatin during their pivotal transition from mass production to premium single malt focus. This whisky was distilled when they were perfecting their new approach to quality over quantity, making it a fascinating snapshot of their evolving craftsmanship. The 17-year maturation period spans their complete transformation into the respected single malt producer they are today.

A 91-point rating places this whisky in the 'outstanding' category, indicating exceptional quality and complexity. This score reflects the successful marriage between Tomatin's Highland character and the Pedro Ximénez cask influence, suggesting excellent balance and depth. For collectors and enthusiasts, this rating indicates a whisky that delivers both immediate drinking pleasure and potential for further appreciation.

Butterscotch notes in sherry cask whisky emerge from the interaction between the spirit's natural compounds and the residual sugars in Pedro Ximénez barrels. During 17 years of maturation, vanilla compounds from the oak combine with the sweet, caramelised elements from the sherry, creating that distinctive butterscotch character. This flavour profile is enhanced by Tomatin's full-bodied style, which provides the perfect foundation for these rich, dessert-like notes to flourish.
