Located in the picturesque Margaret River region of Western Australia, Limeburners Distillery benefits from a cool climate and high-quality water, ideal for whisky production. Founded by lawyer Cameron Syme, the distillery is part of Great Southern Distilling, which operates three distilleries creating various spirits, including gin, malt, grain, and rye whisky.

Limeburners focuses on single malt whisky and has an annual capacity of 120,000 litres of pure alcohol. All grain used is sourced locally from Western Australia. The whisky typically matures in second-fill American oak bourbon barrels, with some expressions finished in Australian fortified wine barrels. Notably, they produce a unique peated whisky using locally sourced peat from the Valley of the Giants in Walpole, adding an intriguing local twist to their offerings.

The Limeburners Distillery is in the south-western corner of Western Australia, in the Margaret River region. The area is famous for wine production, and also hosts an annual event of the World Surf League. The site was chosen for its cool climate and access to high quality water.

Founded by lawyer Cameron Syme, the parent company Great Southern Distilling operate three distilleries in the region making gin, malt, grain and rye whisky, with Limeburners being the brand for the single malt whisky.

It’s another small distillery, with an annual capacity of just 120,000 litres of pure alcohol a year. All of the grain they use comes form Western Australia,, and generally their spirit is matured in second fill American oak bourbon barrels, with some expressions finished in Australian fortified wine barrels. Interestingly they have a peated whisky that is made using locally sourced peat from the Valley of the Giants in nearby Walpole.
