Why do we love this whisky?

Starward Octave Barrels is a single malt Australian whisky which has been fully matured in 100L wine barrels called ‘Octaves’. Octave wine barrels, the inspiration for the name of this release, were sourced from Yalumba – a family-owned Australian winery and were used to produce their iconic Octavius Old Vine Shiraz. Starward has taken two of our favourite things and put them together in a unconventional but nevertheless thoughtful way, the results speak for themselves. Rich and full bodied, lots of red fruit, raisins, ripe peach, caramel and toasty oak - a truly Australian expression.

Frequently Asked Questions

Octave barrels are significantly smaller than standard whisky barrels at just 100 litres, which dramatically increases the surface area to liquid ratio. This accelerated interaction between whisky and wood creates more intense flavour extraction in less time, allowing the spirit to develop complex characteristics more rapidly. The smaller size also means greater influence from the previous wine contents, making these Yalumba Shiraz octaves particularly impactful on the final whisky profile.

Wine barrel maturation introduces completely different flavour compounds compared to traditional bourbon or sherry casks. The residual wine tannins and fruit esters from Yalumba's Octavius Old Vine Shiraz create those distinctive red fruit and raisin notes, while the wine's natural acidity helps balance the whisky's sweetness. This cross-pollination between wine and whisky traditions represents the innovative spirit of Australian distilling, where rules are more flexible than in traditional whisky regions.

This whisky embodies Australian innovation by combining two iconic local industries - whisky distilling and winemaking. Using barrels from Yalumba, one of Australia's oldest family wineries, creates a uniquely Australian terroir that you simply cannot replicate elsewhere. The collaboration showcases how Australian distillers aren't bound by Old World traditions, instead creating new flavour profiles that reflect the country's diverse agricultural landscape and entrepreneurial spirit.

The rich red fruit and raisin characteristics make this whisky exceptional with dark chocolate desserts, aged cheeses like vintage cheddar, or even barbecued meats where the smoky oak complements grilled flavours. The wine barrel influence means it pairs beautifully with dishes that would complement a bold Shiraz - think slow-cooked lamb, game meats, or rich fruit-based desserts. The caramel and peach notes also make it sublime with crème brûlée or stone fruit tarts.

The consistent 90-point scores across multiple prestigious competitions - from the World Spirits Competition to San Francisco World Spirits - demonstrate exceptional quality and international recognition. These aren't just participation awards; they represent blind tastings by expert panels comparing against the world's best spirits. The Platinum and Double Gold medals particularly highlight how this Australian innovation stands toe-to-toe with established whisky regions, proving that creative barrel selection and quality distillation can create world-class results.
