Why do we love this whisky?

Originally created by Mitchell & Son in the early 1900s, the storied Spot Whiskeys were colour-coded by age and style, quietly matured in wine casks sourced from Europe, and sent to rest in bonded warehouses above the River Liffey. Red Spot was the rarest of them all - a 15 year old single-pot still expression that vanished for decades, and has only recently returned. Revived using the same traditional methods: triple distilled, matured in a mix of American Bourbon, Spanish Oloroso, and Sicilian Marsala casks, and non-chill filtered for full integrity. This is a whiskey steeped in history, but built for the modern palate. Bottled at 46% ABV and crafted in partnership with Middleton Distillery, Red Spot is a nod to Dublin’s past, and a celebration of Ireland’s future.

Red Spot is a single pot still whiskey, which is uniquely Irish and uses a mash bill of both malted and unmalted barley, creating a distinctive spicy character. The triple-cask maturation in American bourbon, Spanish Oloroso sherry, and Sicilian Marsala wine casks adds exceptional complexity. This combination of traditional pot still distillation with diverse wine and spirit cask influences creates layers of flavour that evolve from tropical fruit to warming spices, making it stand apart from standard single malt or blended Irish whiskeys.

Red Spot was the premium expression in Mitchell & Son's colour-coded Spot range, aged for 15 years compared to the younger expressions. Its rarity stemmed from the extended maturation period and the specific triple-cask process, which required careful coordination of different barrel types. The whiskey actually disappeared from the market for decades, making original bottles extremely sought-after by collectors. Its recent revival maintains the same traditional methods but with modern quality control, making it accessible again while preserving its legendary status.

Each cask type contributes distinct characteristics - American bourbon barrels provide vanilla and caramel sweetness, Spanish Oloroso sherry casks add rich fruit and nutty complexity, while Sicilian Marsala wine casks contribute unique Mediterranean wine notes. The interplay creates the signature mango and toffee flavours, with the pot still spiciness providing a peppery backbone. This multi-cask approach allows the whiskey to develop greater depth and complexity than single-cask maturation, with each element complementing rather than overwhelming the others.

Non-chill filtering preserves the natural oils and compounds that would otherwise be removed during the chill filtration process, maintaining the whiskey's full flavour integrity and mouthfeel. This traditional approach means the whiskey may develop a slight haze when water is added or when chilled, but this is actually a sign of quality. The medium-bodied character and rich texture of Red Spot benefit significantly from this process, allowing the complex interplay of fruit, spice, and toffee notes to remain intact and deliver a more authentic drinking experience.

The 46% ABV strikes an excellent balance for Red Spot, providing enough strength to carry the complex flavours from the triple-cask maturation without overwhelming the palate. This strength allows the mango sweetness and toffee richness to shine while maintaining the characteristic pot still spiciness. It's strong enough to stand up to a splash of water if desired, which can open up additional aromatics, yet smooth enough to enjoy neat. The multiple gold medals and 95-point rating suggest this bottling strength perfectly showcases the whiskey's intended character profile.
