You know that old saying, third times a charm? This might just be the very embodiment of that in liquid gold. This is the third time Kilchoman has released a Sauternes cask edition, a notoriously tricky thing to get right, and mofo, did they get this right! Most notably, Kilchoman haven’t just employed a mere finishing touch; with this third edition of the Sauternes Cask Matured, their single malt scotch has spent its entire maturation process in a mix of first-fill and refilled Sauternes casks (22% & 78%). Why do we love this whisky?
So here at the 'fo, we're already pretty big fans of Sauternes in general, but what this inspired combination of first-fill and refilled Sauternes casks has done to the unmistakably Islay whisky has damn well cemented us as lifelong fans of the delicious golden French nectar. And what it's done is turn that flavour of the Kilchoman Scotch up a notch. This dram is all about great complexity and depth of flavour, with a surprising lightness for 50% ABV, which is apparent in the lingering finish and fruitiness to match its peat smoke and salty sea air. Released without an age statement and two different distillate vintages, Kilchoman confirmed that the youngest casks incorporated are from 2018. This is empirical evidence that full maturation in Sauternes casks can be done; it just has to be done well.
