Why do we love this whisky?

Kentucky has been making bourbon from before it was even a state, the first commercial distilleries coming to conception in 1783. Shortly after that, in 1799, founder Trey Zoeller’s 8th generation grandmother was arrested for the “production and sales of spirituous liquors” - this rebellious spirit lives on in Jefferson’s Very Small Batch Kentucky Straight Bourbon. Crafted with care and precision, combining centuries of tradition with bold, rich flavours that honour its storied past and delivers quality that only generations of expertise can deliver.

Frequently Asked Questions

Small batch production allows for greater quality control and consistency, with master distillers carefully selecting and blending only the finest barrels from each batch. This hands-on approach results in more complex flavour development and character compared to large-scale commercial operations. The smaller production runs also mean each bottle represents a more exclusive expression of the distiller's craft, with subtle variations that make each batch unique.

These signature flavours come from the bourbon's interaction with charred American oak barrels during the ageing process. The charring creates a layer of carbon that filters impurities while allowing the whiskey to extract vanillin compounds and tannins from the wood. Kentucky's temperature fluctuations cause the bourbon to expand and contract within the barrel, intensifying this extraction process and creating the rich oaky backbone and sweet vanilla notes that define quality bourbon.

The popcorn flavour typically indicates a higher corn content in the mash bill, which is characteristic of traditional Kentucky bourbon recipes. This sweet, grainy note often develops during fermentation and distillation, particularly when using specific yeast strains that enhance these cereal characteristics. It's a desirable flavour that adds complexity and connects this bourbon to its agricultural roots, complementing the vanilla and oak to create a well-rounded tasting experience.

Winning gold medals across multiple prestigious competitions like the Ascot Awards, NYISC Awards, and John Barleycorn Awards demonstrates exceptional consistency and quality. These competitions involve blind tastings by expert panels, making the recognition particularly meaningful as it's based purely on the whiskey's merit. The fact that Jefferson's has maintained this level of excellence across different years shows their commitment to quality control and master blending techniques.

The connection to Kentucky's pre-statehood distilling tradition (dating to 1783) and founder Trey Zoeller's family history creates a direct link to America's bourbon origins. The story of his 8th generation grandmother being arrested for spirits production in 1799 reflects the rebellious, independent spirit that defined early American distilling culture. This heritage provides authenticity and depth to the brand, connecting modern bourbon drinkers to the pioneering traditions that established Kentucky as America's bourbon heartland.
