Why do we love this whisky?

This new kid on the Hirsch block, first released in 2022, is a blend of 95% 3 year old and 5% 8 year old whiskey, from a run of about 160 barrels. The respective mash bills, inspired by their A.H. Hirsch Reserve 16 year old legendary whiskey, are 74% corn, 18% rye and 8% malted barley and 72% corn, 13% rye and 15% malted barley.
The resulting whiskey is smooth – seriously smooth! It seduces the palate with incredible softness, even at 100 proof, it slides across the tongue as soft as 80 proof. The traditional bourbon sweetness is kept in check by earthier notes of mature oak and dried herbs, with hints of orchard fruit, dark chocolate, honey and spice. This is in the wise words of Whisky Advocate ' a very nice sipper' indeed.

The first (74% corn, 18% rye, 8% malted barley) provides classic bourbon character with corn sweetness and rye spice, while the second (72% corn, 13% rye, 15% malted barley) contributes deeper, more nuanced flavours through increased malted barley content. Given its remarkable smoothness and full-bodied character, The Bivouac excels as a neat sipper at room temperature, allowing its complex interplay of honey, dark chocolate, and spice to fully develop on the palate. The 100-proof strength means it can handle a few drops of water to open up additional flavours without losing character. For those preferring cocktails, its robust profile makes excellent Old Fashioneds or Manhattans, though many enthusiasts find the neat experience too exceptional to dilute.
