Why do we love this whisky?

From Australia's easternmost distillery in the Byron Bay Hinterlands, the Cape Byron Viognier Cask is sure to impress. Rich, silky smooth and incredibly well-rounded from extended ageing in ex-viognier and Bourbon casks, this deliciously unique expression of Aussie whisky is one for the annuls. Apple strudel, buttered croissants, a touch of mocha and ripe, charred stone fruits all play delectably well together. This drop is what Whiskymofo is all about!

Frequently Asked Questions

The viognier cask finishing adds a distinctive wine influence that's rare in Australian whisky production. Viognier, known for its aromatic white wine characteristics, imparts subtle floral and stone fruit notes that complement the traditional bourbon cask maturation. This dual-cask approach creates a more complex flavour profile, with the viognier barrels contributing silky textures and enhanced fruit character that wouldn't be present in standard bourbon-only aged whiskies.

Located in Australia's easternmost distillery in the Byron Bay Hinterlands, Cape Byron benefits from a unique subtropical coastal climate that accelerates maturation. The consistent warmth and humidity cause greater interaction between the spirit and oak, leading to faster extraction of flavours and colours. This coastal environment also contributes to the whisky's smooth, rounded character, as the temperature variations are less extreme than inland distilleries, promoting gentle, even ageing.

The rich apple strudel and buttered croissant notes make this whisky exceptional with desserts featuring pastry and stone fruits. The mocha undertones pair beautifully with dark chocolate or coffee-based desserts, while the charred stone fruit character complements grilled peaches or apricot tarts. For savoury options, the full-bodied nature stands up well to aged cheeses or charcuterie, where the spice elements can balance rich, salty flavours.

Unlike Scottish single malts that often emphasise peat or maritime influences, this Australian expression showcases the country's innovative approach to whisky making through wine cask finishing. The warmer climate produces a more fruit-forward, approachable profile compared to the often more austere Scottish styles. The viognier influence creates a uniquely Australian character that bridges the gap between wine and whisky appreciation, offering complexity without the sometimes challenging medicinal notes found in Islay whiskies.

A 93-point rating from Nick's Wine Merchants places this whisky in the 'outstanding' category, indicating exceptional quality and complexity. This score suggests the whisky demonstrates excellent balance, depth, and craftsmanship that rivals premium international single malts. For Australian whisky, which is still establishing its global reputation, such high ratings validate the innovative techniques like viognier cask finishing and demonstrate that local distilleries can compete with established whisky regions worldwide.
