Why do we love this whisky?

Thirty years is not built overnight. It is built on structure, resilience, depth and moments that linger long after the siren.

Crafted from a rigorous selection of casks up to six years of age, this commemorative release reflects that journey. French oak ex-red wine casks from Yalumba bring structure, length and a refined, lightly smoky char that speaks to grit and backbone. American oak ex-red wine barrels from Yalumba add expression and generosity, layering in dried fruits, sweetness and depth. Together, they create balance. Just like a great team.
In the glass, it shines bright light amber with flashes of gold, a nod to three decades of proud history.
The nose rises confidently. Dried figs, apricots and caramel richness leap from the glass, followed by sweet vanilla and Christmas spice. As it settles, freshly baked biscuit and a gentle wisp of smoke emerge, subtle, composed, assured.

The palate is rich and fruit driven from the first sip. Dried figs and raisins roll forward, developing into apricot, warming spice and dark chocolate. As the flavour builds, fine tannin and a touch of minerality provide structure and length, a backbone that carries through with intent.
The finish is long, smooth and persistent. The ex-wine oak delivers layered complexity, dried fruit and Christmas cake depth, before giving way to a light charry smokiness that lingers, proud and enduring.
Like any true legend, it leaves its mark.

Thirty years of moments.
Thirty years of belief.
Thirty years of Legend Status.

Frequently Asked Questions

This commemorative release stands out through its innovative maturation in French and American oak ex-red wine casks from Yalumba, creating a distinctive flavour profile that bridges whisky and wine worlds. The single barrel format means each bottle represents a unique expression that can't be replicated, while the ex-wine cask maturation adds layers of dried fruit complexity and fine tannins rarely found in traditional whisky aging. This approach reflects the growing trend of Australian distilleries experimenting with wine industry partnerships to create uniquely Australian expressions.

The French oak ex-red wine casks contribute structure, length, and a refined smoky char, while American oak ex-red wine barrels add generous dried fruit sweetness and depth. This dual-cask approach creates a whisky that exhibits wine-like characteristics including fine tannins, minerality, and complex fruit flavours ranging from dried figs to dark chocolate. The result is a more fruit-forward and structured whisky than traditional bourbon or sherry cask expressions, showcasing how wine cask maturation can add sophisticated complexity to Australian whisky.

Single barrel means this whisky comes from one individual cask rather than being blended from multiple barrels, making each bottle part of a limited and unrepeatable batch. This approach allows the unique characteristics of that specific cask to shine through, including subtle variations in wood influence, evaporation rates, and flavour development over its up to six years of aging. Single barrel releases are prized by collectors and enthusiasts because they offer a pure, unfiltered expression of the distiller's craft and the individual cask's contribution to the final product.

Serve neat in a tulip-shaped glass at room temperature to fully appreciate the complex nose of dried figs, apricots, and Christmas spice that develops as it opens up. The full-bodied nature and wine cask influence make it excellent for slow sipping, allowing the layered flavours to evolve from initial fruit sweetness through warming spice to the long, smoky finish. A few drops of water can help open up the more subtle notes, while the robust character also makes it suitable for pairing with dark chocolate or dried fruits that complement its natural flavour profile.

The 'up to six years' aging represents a careful selection process where casks of varying ages were evaluated for optimal flavour development, with the best expressions chosen regardless of exact age. The NV (non-vintage) designation indicates this is a curated blend of different aged spirits rather than a single year's production, allowing 78 Degrees to prioritise flavour consistency and quality over age statements. This approach is increasingly common among craft Australian distilleries who focus on flavour maturity rather than arbitrary age numbers, ensuring each release meets their quality standards.
