This Fiji rum is the result of a remarkable odyssey that spans the globe. It began with the careful curation of just 18 casks of 2004 vintage rum, uniquely filtered through coconut carbon. After resting for __17 years__ in the tropical heat, the spirit crossed two oceans to reach the southwest of France. There, it completed its journey with two years of refinement in Ferrand Cognac casks, marrying Pacific intensity with French elegance.

Don't worry, try one of these

Why do we love this rum?

This very intense spirit opens with rich aromas of coffee, vanilla and fudge that evolve into notes of walnut, cocoa and fruits such as peach, banana and cooked pear. The palate is oily and tangy, offering flavours of quince, citrus peel and coconut balanced by balsam and cinnamon. It concludes with a very long finish defined by smoky molasses, cocoa, almond and lingering hints of fruit and cloves. This is true mastery from Domaine de Ferrand's Alexandre Gabriel and Rum co. of Fiji's own master distiller Liam Costello.

Frequently Asked Questions

This Fijian rum showcases the unique terroir of the South Pacific, where the tropical climate and volcanic soil create distinctly different flavour profiles compared to Caribbean expressions. The collaboration between French cognac house Domaine de Ferrand and Fiji's Rum Co. brings together European finishing techniques with Pacific island character, resulting in complex notes like walnut and quince that are rarely found in traditional Caribbean rums. The 2004 vintage also benefits from nearly two decades of maturation, developing exceptional depth and complexity.

Given its full-bodied nature and 90-point rating, this rum is best enjoyed neat or with just a splash of room temperature water to open up the aromatics. Serve it in a tulip-shaped glass or snifter at room temperature to allow the rich coffee, vanilla, and tropical fruit notes to fully express themselves. The oily, tangy palate and very long finish make it perfect for slow sipping, much like a fine aged whisky or cognac.

The rum's complex profile of coffee, vanilla, cocoa, and tropical fruits makes it an excellent match for dark chocolate desserts, particularly those with coconut or banana elements. The balsam and cinnamon notes pair beautifully with spiced desserts like bread pudding or crème brûlée. For a more adventurous pairing, try it alongside aged cheeses or even grilled pineapple with cinnamon, which will echo the rum's tropical fruit and spice characteristics.

The 2004 vintage represents nearly 20 years of careful maturation, allowing the rum to develop the intense, layered complexity described in its tasting notes. This extended ageing process transforms the raw spirit into something approaching the sophistication of aged cognac or single malt whisky. Limited edition vintage rums like this are increasingly rare as distilleries focus on younger, more commercially viable expressions, making this bottle a genuine collector's piece that showcases the pinnacle of rum craftsmanship.

This partnership brings together two distinct rum-making philosophies - Gabriel's French cognac expertise from Domaine de Ferrand with Costello's intimate knowledge of Fijian distillation traditions. Gabriel is renowned for his innovative finishing techniques and understanding of how different climates affect spirit maturation, while Costello represents the authentic Pacific island approach to rum production. Their combined mastery results in a rum that honours Fijian heritage while incorporating sophisticated European refinement techniques.
