Why do we love this mezcal?

The name "La Travesía" translates to "The Journey" in English. A reference to the lengthy process undertaken to achieve the final product. This transformative journey starts with growing the Espadín agave plants for 6-8 years before harvesting the piñas (agave hearts). Those hearts are then slow-roasted for approximately 30 hours in a 'horno', in this case, a quarried limestone kiln oven. Once the now-smoky cooked agave juice is extracted, it spends time in pinewood fermenters before being distilled in small batches in copper pot stills and finally bottled at 42.5% ABV. The result of this long journey is an authentic, ultra-flavorful spirit that captures the essence of agave at its finest.

Frequently Asked Questions

While both are agave spirits from Mexico, this La Travesía mezcal uses traditional production methods that create a distinctly smoky character. The Espadín agave hearts are slow-roasted in a limestone kiln oven for 30 hours, imparting the signature smoky flavour that tequila lacks. Additionally, mezcal can be made from various agave species and typically employs more artisanal, small-batch production methods like the copper pot stills used here.

Agave plants require this lengthy maturation period to develop sufficient sugars and complex flavours in their piñas (hearts). During these years, the plant concentrates its energy into the core, building the starches that will convert to fermentable sugars during the roasting process. This patient cultivation is essential for creating the depth and authenticity that distinguishes artisanal mezcal from mass-produced spirits.

This medium-bodied mezcal offers a complex interplay of herbaceous, smoky, and sweet notes that reflect its traditional production methods. The 30-hour limestone kiln roasting creates the distinctive smokiness, while the Espadín agave contributes earthy, vegetal characteristics. The pinewood fermentation and copper pot still distillation add subtle woody undertones, resulting in an authentic expression that captures the terroir of Mexican mezcal production.

At 42.5% ABV, this mezcal is perfectly balanced for sipping neat at room temperature to appreciate its complex smoky and herbaceous character. Traditionally served in a clay copita or small glass, it's often accompanied by orange slices and sal de gusano (worm salt) to complement the spirit's earthy flavours. The authentic production methods make this ideal for slow contemplation rather than mixing, allowing you to experience the full journey from agave plant to bottle.

The limestone 'horno' kiln is crucial for developing mezcal's signature character, as it provides even, sustained heat that slowly caramelises the agave's natural sugars over 30 hours. This traditional method creates deeper, more complex smoky flavours compared to modern industrial ovens, while the limestone itself can impart subtle mineral notes. The slow roasting also helps break down the agave's tough fibres, making the sugars more accessible for fermentation and ultimately contributing to the spirit's authentic, ultra-flavourful profile.
