Why do we love this mezcal?

Mezcal, Oaxaca's traditional agave spirit, has been exploding in popularity over the last 10 years, largely due to the demand for high quality, small production craft spirits, which its big cousin Tequila only provides at astronomical prices. Established in 2010, Espíritu Corsa purchased a third generation Palenque located in San Agustin Amatengo, Oaxaca. Working alongside their mezcalero, they have produced several fantastic lines. Buen Bicho is named in admiration for the persistence and strength of the worker ants at their Palenque.

While both are agave spirits, mezcal offers a more artisanal experience with traditional production methods that create its distinctive smoky character. Unlike mass-produced tequila, this Buen Bicho is crafted at a third-generation palenque using time-honoured techniques that preserve the authentic flavours of Oaxaca. The roasting process in earthen pits gives mezcal its signature smokiness that you simply can't find in tequila.

Joven means 'young' in Spanish, indicating this mezcal is unaged and bottled directly after distillation. This preserves the pure, vibrant agave flavours and the characteristic smoky notes from the traditional roasting process. Joven mezcals showcase the raw essence of the agave plant and the mezcalero's skill, offering a more authentic taste of traditional Oaxacan craftsmanship than aged expressions.

This medium-bodied mezcal delivers a complex tasting experience combining fruity sweetness with mineral earthiness and distinctive smokiness. The fruity notes likely come from the natural agave sugars, while the minerally character reflects the volcanic soils of Oaxaca where the agave grows. The smoky backbone is the hallmark of traditional mezcal production, created when agave hearts are roasted in underground pits lined with volcanic rocks.

Traditionally, mezcal is sipped neat at room temperature to fully appreciate its complex flavours, often accompanied by orange slices and sal de gusano (worm salt). The medium body and balanced profile of this Buen Bicho makes it excellent for both sipping and mixing in craft cocktails. Try it in a mezcal negroni or paloma to experience how the smoky notes complement other ingredients while maintaining the spirit's distinctive character.

Buen Bicho translates to 'good bug' and pays homage to the persistent worker ants found at their Oaxacan palenque.
