If you've got a soft spot for heavily sherried whisky, you've just found your holy grail. Distilled in 2006, this 17 Year Old Tomatin is a standout release from their highly sought-after Sherry Collection. After maturing gracefully in traditional oak, the liquid is moved into premium Pedro Ximénez sherry casks. PX is famously sweet and syrupy, and it completely transforms this Highland malt. Expect a decadent hit of sticky date pudding, dark chocolate, freshly roasted espresso and heavy dried figs. The finish is remarkably long, rich and packed with warming winter spices. It's an absolute dessert in a glass and dangerously easy to drink.

Why do we love this whisky?
Tomatin has one of the most fascinating comeback stories in the Scottish Highlands. Tucked away in the Monadhliath Mountains just south of Inverness, they were actually the largest distillery in Scotland during the 1970s. Back then, they operated as a massive workhorse, churning out millions of litres for the global blending industry. But times change, and Tomatin made a brilliant pivot. They drastically scaled back their production, shifted their focus away from sheer volume, and dedicated themselves to crafting exceptional single malts.
