The 'Bastard' is Stauning's second release from their more expirmental 'Research' Series. The rye whisky made entirely from locally sourced ingredients and double-distilled in direct-heated pot stills. Then after maturing for at least 3 years in toasted virgin American oak casks, it is treated to 6-months of finishing in ex-mezcal casks from Oro de Oaxaca. The result is a glistening golden single grain whisky with lightly smoky, sweet & spicy charactertisics; agave and brown sugar, buttered dark rye bread, cracked pepper, dried herbs and fruit with lingering wood smoke. Stauning might call this their 'Bastard', but we call it a 'bloody beaut'.

Why do we love this whisky?

Denmark’s Stauning distillery was founded by nine friends (a doctor, a chef, a butcher, a teacher, a helicopter pilot and four engineers) back in 2005 in Western Denmark. These pioneering Danes operate with a grain-to-glass ethos at the heart of their operation, with their whiskies made from rye and barley grown just a bicycle-ride away from the distillery. While most distilleries now buy malt from industrial suppliers, these dilligent Danes employ traditional floor malting at their distillery; a labor-intensive, hands-on process where barley is soaked in water (steeping) and then spread out on a cool concrete or stone floor to germinate. And that's just the start of the process – talk about a labour of love.
