Created using time-honoured traditional techniques passed down through 11 generations of the Arellanes family, The Rustico is a truly artisinal mezcal of exceptional quality. Crafted by slowly roasting fully-mature Espadín maguey hearts on firewood embers before natural fermentation with airborne yeast and a slow double-distillation in traditional clay-pot stills. This is a brighter, unaged style of Mezcal; offering fresh herbs, citrus and light ash notes, rather than heavy smoke, which mingle with crushed walnuts, roasted corn, and savory spices all delicately balanced against richer agave notes of caramel and butterscotch.

Why do we love this mezcal?
In the highlands of southern Mexico, the renowned Arellanes family has been continually distilling mezcal for eleven generations, cementing their legendary commitment to craftsmanship and status as one of the region's most celebrated mezcals since the late 1700s. Their multiple generations of expertise are instantly recognisable in their simultaneously complex and approachable spirits.
To grow and harvest fully-mature Espadín maguey hearts for the Don Amado Rustico Mazcal usually requires around 8 to 10 years of patience and dedication... and then the real hard work begins. These things are large, with the fully-mature piñas usually weighing around 54 to 68 kg –sometimes up to almost 100kg! Once harvested, the hearts are traditionally earthen-roasted and double-distilled in small traditional ceramic clay pots. It all just goes to show the lengths the Arellanes family will go to prioritise quality, durability, authenticity, and flavour over mass production... and, well, we really can't express just how genuinely thrilled we are about it!
